The journey begins in the sacred grove. Known locally as the Oran, this ancient community land sits adjacent to Kaner and sets the tone for everything that follows. The walk continues through Kaner's wild gardens, where stories and anecdotes drawn from local culture bring desert botany to life — revealing the quiet but profound role that plants have played in the cuisine and culture of the Thar for centuries. Younger guests delight in foraging their own little souvenirs to carry home, while adults find themselves lingering with a deeper curiosity about the desert ecosystem, they are now a part of.

The desert walk culminates in the Kaner Signature Thali — the walk, reimagined on a plate. This desert-to-table experience brings together treasured recipes from the kitchens of our local staff and the family cookbook of Kaner's founder, Sapna. Every dish reflects the seasonal, wild and local pantry of the Thar Desert — honest, rooted, and full of story. Both vegetarian and non-vegetarian options are available, honoring the breadth of Rajasthani cuisine. The name says it all. Demoiselle Cranes — named after the French word for 'damsel' — may appear delicate, but every September they rise above 16,000 feet, crossing the mighty Himalayas on one of the world's most gruelling migration routes, flying all the way from Mongolia and Siberia to land in the small village of Kheechan in Rajasthan. Listed on the prestigious global Ramsar wetlands registry, Kheechan is where villagers collectively feed and care for thousands of these birds at the Chuga Ghar. The village is also home to beautifully carved havelis — quiet reminders of merchants who once traded along the Silk Route.

Twenty years ago, Satbiri Devi, a woman farmer whose story has become a quiet symbol of women empowerment and sustainable farming in Rajasthan, planted 6,500 olive trees in the desert. Two decades of patience and perseverance later, her Rajasthan olive farm produced the Thar Desert's first olive oil. This lunch is an ode to her extraordinary journey. The farm-to-table menu celebrates the modern produce that has made the Thar its home — olive oil, pomegranates and figs — all sourced locally, brought together in a spread of fresh salads and breads. Served outdoors with a fresh desert breeze and birds for company, it is desert cuisine reimagined, familiar yet quietly surprising.

Dr Ilse Kohler, a German veterinarian who has spent years living amongst camel herders, has dedicated her life to the world of the Raikas. For this ancient community, the camel is not livestock — it is family, a sacred gift from Lord Shiva. Dr Ilse's non-profit works to protect this extraordinary bond and the culture that flows from it — beautiful camel jewellery, textiles and a deep knowledge of the desert. Raikas' camels graze in sacred groves, feeding on over 35 varieties of medicinal plants, making their milk remarkably nutritious. Savour the camel cheese with tea and our house-baked biscuits — a gentle, unexpected delight. .Guests can attend an interactive session on camels, taste camel cheese and go on a ride with them(optional).

Scarcity never stopped the people of Marwar from creating extraordinary food. A culture that survived on foraged ingredients and rain-fed millets turned resourceful when new ingredients arrived — sun-dried, shelf-stable and full of possibility. Chickpea flour, dried mango powder, local grains — the Marwari pantry is a lesson in ingenuity. The dinner celebrates this spirit with dishes rooted in tradition and reimagined for today. The star of the evening is Kabuli — chunks of white bread tossed in a rich, fragrant sauce. How does it taste? That is for you to discover.

This is the Thar as few ever see it. The safari takes guests across sand dunes and through groves of Kair, Rohida and Khejri — the hardy, sacred trees of the desert — far from the crowds and into true desert wilderness. Along the way, guests are often greeted by herds of Chinkara (Gazella bennettii), groups of Nilgai (Boselaphus tragocamelus) and the legendary Dromedary camel in their natural habitat. The drive culminates at a pristine sun-point, where you can walk the dunes and feel the cool desert sand shift beneath your feet. Tea and snacks follow, served in the silence of the desert.
